This salad is really good and super easy to make. This is what I did. Cut 1 zucchini in to thin strips, slice a hand full of cherry tomatoes, fresh basil (I prefer to cut it smaller), garlic sliced (I used pre-minced), generous drizzle of extra-virgin olive oil, salt to taste, optional: chopped raw walnuts (I don't care for them, so I didn't add them). Let stand at least 20 mins. I liked it 2 days later, it was just a little juicy, the zucchini was still crunchy.

zucchini is pretty much my favorite veggie ever! I'll have to try it in salad.
